New to alllll of this, so just wanted to double check - you're only eligible for Crossover updates if you buy the multi-hundreds $£ version? So if you buy 60/70$£ version you're stuck with whatever works at that version?

Crossover Life is for life. For yearly updates you buy Crossover+. There's 25% right now.If you buy Crossover+ once you get all the updates for a year. That can include a new version too. If you don't buy each year you're stuck with your current version. Crossover is heavily discounted on Black Friday or Cyber Monday. Then you can extend your license for several years cheaply.
Renewals of CrossOver+ are also 50% cheaper than the initial purchase (and even less with promotions) if you renew within a year of purchase.
