This is a very good question. I searched the internet and did not find any monothematic conferences dedicated to Drupal in Health Care.
The ISHIMR 2011 conference http://www.ishimr2011.com/ that I co-chaired in Zurich, Switzerland, included several papers regarding the applications of Drupal in Health Care, however the topics were quite broad.
I strongly recommend and would be happy to help organising such a conference in collaboration with DrupalCon. Does anybody know whom to contact?
Drupal has a great potential to contribute to Health Care and in my opinion it has not been yet fully exploited.
