Just posted a little module I wrote... let's you log all insert/update/delete queries so you can transfer changes from one site to another by dumping the sql.
Yeah, the whole test (mess around with anything), staging (make specific changes and see what they look like), production (launch for real, after staging looks OK) is a tough challenge.
