Oui, tout à fait possible, en utilisant l'utilitaire adb que tout développeur android connait. Tu branches ton mobile, adb shell et voilà, un ls -la ça donne un truc dans le genre (ici sur mon Keon)

Serveur SSH ?

Jamais essayé, mais c'est du linux, donc peut-être. Après faut voir ce qui est possible de faire au niveau config réseau etc... Y a peut-être des choses bridés, je ne sais pas. Je m'y connais pas assez en système embarqué téléphonique.

Mais bon, l’accès au shell et la possibilité d'activer l'USB media storage devrait être suffisant pour bidouiller son téléphone.
