PR Summary

Sorry, don't know github too well so all three commits are in one pull request - I did want to do them individually. And one is in a separate PR but also in this one?

Added info for troubleshooting a colorscheme issue
Added info for troubleshooting brackets appearing when autocompleting cmdlets when using blink.cmp (I know it's not really a PSES thing, but I imagine this is where people will look for it)
Added info for configuring additional settings, I know it's from a now deprecated repo, and it's in one string instead of nice but it's better than nothing.

PR Context

I added all this as I use Powershell in Neovim and there aren't a lot of useful resources out there, so hopefully this helps other people adopt Neovim :)
