Hi,
I've spent a few days learning about GPL 2 and still not 100% sure if I can use Drupal as a Site Builder for my subscription based project?
If so, when a user subscribes do I have to send him access to the source code?

Yes, you can use Drupal for this. The GPL2 provides the freedom to use the software for any purpose, including for-profit purposes. There is nothing borderline about your use-case.
No. Just subscribing to your service does not trigger the obligation to provide your subscribers with the source code.
