Hi, I'm wondering what steps people are taking in relation to implementing the new EU directive about cookies?

less strict in Ireland?

I think the implementation of the law is more relaxed in Ireland than it is elsewhere in the EU. See http://www.mhc.ie/publications/item/477/irish-cookie-regulations-update

Sounds like as long as you clearly explain the use of non-essential cookies in your privacy policy, then the user can manage their cookies via the browser as normal. That's my understanding of that article anyway.
