The idea is to:
/_ml/trained_model/_statsdoc, which gets the stats fromPytorchResultProcessor.getStats(): https://github.com/elastic/elasticsearch/blob/main/x-pack/plugin/ml/src/main/java/org/elasticsearch/xpack/ml/inference/pytorch/process/PyTorchResultProcessor.java#L231
