ci: Update checkout and install git #25

The checkout action uses git to clone the repo, if available, otherwise it downloads a tar.
We installed git for one workflow, but not the other, so I unified it.

Also updated checkout to v7.

Such that checkout action can use that instead of having to download
a tarball.
Was already there for other pipeline, so not it's unified
