 fix: fix forest-theme nix package definition 
This commit adds creates the missing `mathjax/mathjax-newcm-font` directory
under `output` in default.nix. Currently, an error is thrown during a build
due to the folder being missing when the mathjax-newcm-font sources are
copied over.
