Hi! Good question :p
It's because I haven't had the time to compile and test the release lately.
Also, since I usually try to update the Ebuilds shortly after they release, so Gentoo doesn't have ebuilds for the most recent www-client/firefox. (well, the firefox patchset is the important part, tbh)

This is not the case for the -bin variant and updating it is a matter of ~5 minutes.
