[v13.0] Use non-deprecated keys in logging docs #1608

Backport: #1606

Extends the doc update done in forgejo/docs!1481 which updated
the keys in config-cheat-sheet. The logging documentation page now
also uses the newer logger settings names introduced in
forgejo/forgejo!8667.
