I don't know if this is intentional, but it is weird how default saplings only grow into apple trees, even though they are dropped from several different shapes of trees. Would it be possible to make the sapling grow into those different shaped trees?
I say this because it's impossible to re-grow a forest since it makes them all identical apple trees.

I completely agree. The "default" sapling is really just an apple tree sapling right now.
The tree system needs a bit of rework.
I still intend that the same wood and leaf types are used by multiple differently-shaped trees and yeah, it should be possible to regrow the other tree shapes. At least most of them.
I think especially the whole "default tree" nodes need a full rework, they are used for too many things.
Maybe I could turn the apple tree into its own species and separate it from the non-apple-bearing trees and bushes.
I recently turned two trees in the biomes into their own species: The trees in Grove have become redwood trees (different from the real-world counterpart tho) and the trees in Poplar Plains and Baby Poplar Plains have become poplars. They have their own saplings.
I really like how the redwood trees turned out. But I’m not sure if I keep the poplars or the poplar biomes before release because they’re pretty boring.
What’s not addressed are the odd trees with apple leaves in Mystery Forest, but this is a special case and are not meant to be regrown by saplings ... for now. Handled in #276.
The "default" tree and wooden planks are now explicitly apple trees/wood. As for the bushes that bear apple leaves: This is intentional. I like to have the various trees also in bush form.
So this should resolve this issue.
