About Hakuba Nishiki

Our brewery is located in Omachi City, Nagano Prefecture, nestled at the foot of the Northern Alps at an elevation of over 700 meters. Blessed by this rich natural environment, we continue to brew sake using contract-farmed rice from Shinano Omachi and the pristine water of the Northern Alps.

With a commitment to brewing safe and wholesome sake from the heart—using the rice, water, and spirit of our hometown—we strive to deliver a product that reflects the very essence and character (fūdo) of this land. Our passion is to continue crafting a memorable hometown sake (sato-zake) that will forever remain in the memories of our customers.

Fūdo (風土): A Japanese term that describes the unique spirit of a place, encompassing its climate, geography, culture, and traditions. It is similar to the concept of "terroir" in winemaking.

Sato-zake (郷酒): Literally "hometown sake." It represents a sake that is deeply connected to its local region, made with local rice, water, and by local people.
