Ron,
I see a lot of Redhat Enterprise Linux in the industry. Fedora Core is 
close, but it might be worth at least explaining the differences to your 
students if installing REL isn't an option.
I do see some Debian, Ubuntu and Gentoo around a lot but not 
commercially installed.
