Allow partial customization of Conventional Commits: add/remove change types and extend configuration options #1588

Description

Description

Hi team,

I’d like to request a feature that enables more flexible customization for users who prefer to stick with the standards provided by Conventional Commits, but still want some configurability. Currently, if we want to change the available change types or tweak some behaviors, we have to fully customize Commitizen, which can be daunting for those who primarily want to follow the Conventional Commits structure.

Feature request:

Allow users to add new change types to the default Conventional Commits set
Permit the removal or disabling of existing change types (especially those that are optional)
Expose additional configuration options for Conventional Commits, so users can tailor the workflow without needing to start from scratch
This would make it much easier for projects to adopt Conventional Commits with minor tweaks, rather than requiring a full custom configuration.

Thanks for considering!
