We can not sensor temperature changes fast enough

Examples: "We need to implement automatic sensoring of critical data". As in we need sensors that work without human intervention. Or "We can not sensor temperature changes fast enough".

Or should I use measure/measuring instead?

English is very flexible, and just about any noun can be made into a verb, but I don't like your sentences. I would say:

We need to implement automatic monitoring of critical data.
We can not sense temperature changes fast enough.

In addition to "sensor" not being a verb and there being existing verbs that more suitable, it sounds almost exactly like the real verb "censor". We want to automatically censor the critical data so our competitors can't steal it. ;)
Like gengo, I would use "monitor" in the first sentence. I would probably use "detect" in the second sentence, but "sense" works. There are probably more possibilities for each sentence.

This comes up often in my translation work, since Japanese has only one word for both. However, strictly speaking, detect should be used for binary changes. You detect whether something is on or off, working or not working, etc. Sense should be used for qualitative information. You sense a temperature, a weight, etc. Therefore, if the idea is simply that of determining whether or not a temperature has changed (yes or no), detect is best. On the other hand, if it is to determine what the new temperature is, sense is best.

A change is an event. You can detect a change in temperature. It goes from not changed to changed. The way you would detect the change is by the value changing so you are measuring (not just sensing them but putting them on a scale) the values in order to detect the change.

I think we are in agreement, but just to clarify my point, we can't (or at least shouldn't) say that we detect a temperature. That is, we don't say "we detected a temperature of 35 degrees." The word should be sensed in a technical context, or measured in a more colloquial context.

I translate only patents, so my work is heavily skewed to the technical side, but in that field "to sense" is the normal word for this action. That's why we call the device a sensor. A detector detects the presence of something, etc.
