I thought it might be an option in Monitor configuration:
Admin view only: True/False
True: mean that only Admin could see this monitor in live view and its recordings
False: not admin users could see this monitor in live & recordings
What are you recording that you don't want someone on your LAN network to see? :-)
rather for having two live views - one with all cameras and second with most important monitors

Mosiac images are easy with go2rtc, I've got 16 cameras but usually only watch 4. You select the cameras you want to view and hit stream. Bookmark the page url in as many configurations as you please. Modify the masiac order by prefacing camera name with 1-9 for example.
