There are currently 5 DoH servers by default (Cloudflare, Google, NextDNS, OpenDNS, Quad9, with NextDNS by default). This is inherited from the previous addon.

I propose to add a few ones like wikimedia-dns.org (and perhaps others upon suggestion) as well as a link to a curated list of DoH servers. I know this one by curl.

Also, it may be in this ticket or a dedicated one, but I would prefer to remove the notes about "logs/no logs" for each DoH server given this is like a legal advice and it is difficult to assert if a given DoH server keeps logs (or between these two positions, if they keep "technical" logs to mitigate threats with a legal status to be defined).

Possibly also, the notes about "filtered/no filtered" may be checked and updated. For instance I see on curl’s list that Quad9 is "threat-blocking" hence technically it is filtered in some way.
