Youwill need 500ml (17 1/2 fl oz)
passata (sieved tomato pulp), 100g (3oz) parmesan, finely grated, 60g (2oz) dried breadcrumbs, olive oil to shallow fry, 4 eggplants, cut lengthwise into 7mm thick slices, 4 balls of buffalo mozzarella, cut into 4mm thick slices and green salad to serve.
Pour in the
passata and chopped tomatoes and turn the heat down to a simmer.

3 Mix the
passata with the garlic granules and herbs, then season.
